Lately I’ve been having an insatiable desire for sweet-somethings, cakes in particular. However I haven’t had the time to hit the nearest confectionery so I figured I might as well whip something up myself. I dug out my old f&n (read: food and nutrition, not the fizzy drink co.) textbook and flipped to the recipe section which provided a simple guide to making plain butter cakes with the use of the rubbing-in method. This is one of my favourite techniques cos it allows me to get ‘down and dirty’ with the butter and flour, albeit a little tedious but fun!
Unfortunately I underestimated the recipe and left the cupcakes in the oven for 20 minutes as the recipe required, without checking on them, thinking what damage can possibly be done in such a short time! I should have followed my baking instincts cos now I’m left with slightly burned cupcakes. sob! I overlooked the fact that my oven is smaller than the average one so I probably needed to lower the temperature. Now I’ll just have to pinch at the centres and make do with it. I’m going to make another batch soon, and this time I’m going to make icing and top them off with the chocolate sprinkles Joan brought back from the netherlands. Yum!
